My love affair with Coolhaus began almost a year ago, and it really was love at first bite. I had wanted to try them ever since I’d heard there was a funky ice cream truck that was creating artisanal, hand-crafted ice cream in a variety of unique flavors and sandwiching it between different kinds of cookies.

We’re not talking about the ice cream sandwiches you had growing up, with the soggy, chocolate cookie residue left on your fingers and vanilla or Neapolitan ice cream in between. These are eclectic cookie and ice cream combinations such as balsamic glazed fig mascarpone ice cream on chocolate chip cookies, ricotta and sour cherry on chocolate cookies or brown butter candied bacon on snickerdoodle.

There are almost infinite possibilities in the ice cream sandwiches you can create with their different flavors of cookies and ice cream, not to mention the seasonal flavors and different items they test out. I have not had an ice cream sandwich from them that I didn’t like. I don’t go to LA very often so I don’t get Coolhaus as much as I’d like. But when I do, it’s a little piece of heaven that sends my taste buds a flutter.

The truck usually holds seven ice cream and five cookie flavors at a time. Below are some of the flavors they have had.
